Best of all, all it takes is chopping up some veggies, cracking open a can of beans and a can of corn, and whipping up a delicious avocado salsa, and you’ve got a great meal ready to go.
what do you need
1 head of lettuce, chopped 1 cup sweet pepper, chopped 1/2 cup cilantro 1/2 cup red onion, chopped 1/4 cup green onion, chopped 3/4 cup chopped tomatoes 1 can of black beans 1 can of corn
1 avocado 1 clove garlic (or more!) 1/2 teaspoon salt 1/2 teaspoon pepper 1/4 cup olive oil 1 tablespoon coriander juice from 1 lemon Delicious and nutritious
What do I do
Place all dressing ingredients in a food processor or blender and blend until completely smooth. Mix well and make sure there are no lumps. Sit aside. Chop all the vegetables and put them in a large bowl. Open the black beans, rinse them well, and dry them. Add to the salad bowl. Open the corn, rinse it well and toss it on the salad. Pour the dressing over the prepared salad, tossing evenly. Enjoy your delicious salad! Feel free to add tortilla chips, chicken, cheese, or anything else. Add chicken to make a complete meal
